Stoked Wood Fired Pizza Co.
Tucked into the heart of Cohasset, there’s a neighborhood hangout that offers delicious pizza, fun drinks, classic games, and a welcoming atmosphere. Cohasset is the newest of three locations for Stoked Wood Fired Pizza Company, and it definitely brings the fun day or night that co-owners Toirm Miller and Scott Riebling set out to create.
“We want our menu to be approachable to all people, so there may be no real surprises on there, but if you get Buffalo Wings, they’re going to be some of the best wings you’ve ever had. And if you get pizza, it’s going to be crispy. It’s going to have a soft texture inside. It’s going to have a lot of flavor on top and really pop with the ingredients that we top pizzas with.”
“We’re a very family friendly restaurant for sure.”
“I mean, pizza by nature is family friendly. Everybody likes pizza and it’s a neighborhood vibe for sure. We’ve set out to be a neighborhood pizzeria. We have tons of regulars that we see, and it’s been a warm, welcome embrace here in Cohasset.”
“It’s all about simple foods done with great flavor and great technique.”
That philosophy starts, of course, with the pizza. They’re hand mixing and tossing their dough to order before it goes into that wood-fired oven.
“The first thing that we do is we start with really great dough. It has a polish in it, which is similar to a sourdough, in that it starts two days before the final dough, and it brings a lot of flavor and a great fluffy texture to the dough. The most important thing when you’re eating pizza is that you get an initial crunch, and we have a wood burning oven that has really high temperatures, and it also has a lot of good convection going on.”
“And that tends to give you a crunchy, crispy pizza that’s also really soft in the middle. And then we’ve got a blend of cheeses. So every cheese pizza has fresh mozzarella, aged mozzarella, Parmigiano Reggiano, and Pecorino Romano on it. So it’s really a four cheese pizza. And each one of those cheeses does a different thing.”
“The Pecorino Romano is a little salty. The Parmigiano Reggiano is nutty. And then, of course, the fresh mozzarella has a milky, creamy flavor to it. And the aged mozzarella is your classic piece of cheese. It’s the body that gives the great cheese pull.”
The New York white pizza layers fresh garlic, ricotta cheese, oregano, and black pepper for a creamy, super cheesy bite. The buffalo chicken pie brings bold flavors with gorgonzola, aged mozzarella, buttermilk ranch, and a fiery housemade buffalo sauce.
But the fan favorite has to be the meatball and ricotta pizza.
“The meatball ricotta is a special pie because we use really good ricotta. It’s made locally and we get it really fresh, and it’s got a creaminess to it that you couldn’t get out of other cheeses. Our meatballs are somewhat famous. It’s really about, of all things, vegetables. You wouldn’t expect that out of a meatball.”
“But what we do is we actually roast a lot of red peppers, green peppers, garlic, and that gets put into the meatball along with soppressata, which is a salami. It finally ends with a little drizzle of basil oil on top so you get fresh herb. You’ve got those meatballs with all that flavor and you’ve got the great crispy crust.”
“We also want to make sure that we have a meatball that’s a melt-in-your-mouth meatball. Like it’s not tough. It’s not hard. It’s not dense, so it’s going to be soft and fluffy, which is a strange thing to say about a meatball. But try it and you’ll see.”
You’ll also find those meatballs served on their own as an appetizer, along with classic starters like fried hand-cut mozzarella, breaded in-house for serious cheese pulls. The chicken wings come tossed in either tangy Carolina barbecue or spicy buffalo sauce, served with housemade ranch to balance out the flavor.
You’ll definitely be stoked if you order one of Stoked’s signature sandwiches, like the Chicken Bacon Ranch stacked with grilled chicken, roasted red peppers, Grillo’s pickles, housemade ranch, and applewood smoked bacon.
And then there’s the Smash burger.
“We’ve got three types of meat in it. They’re all beef, but it’s short rib, chuck, and brisket. And that flavor combination is just incredible. There’s a sauce that we make in-house with a Korean red pepper paste, just enough to give it a little bit of heat. We’ve got Grillo’s pickles, which I think are the best pickles.”
“It’s one of the few things I don’t make from scratch here, because I think they do such a good job with it. And just a little bit of chopped onion to bring freshness, and Cooper American cheese, which is by far the best American cheese you can buy. It costs a lot of money, but it’s worth it, and you’ll notice the difference.”
For dessert, things get warm and indulgent, with a cookie skillet served hot in the pan and topped with vanilla ice cream.
From the pizza oven to the grill to the bar, Stoked has something for everyone.
“Our cocktails here at Stoked are heavily focused on tropical drinks. Again, just playing into that really fun vibe. Pizza spot. Tropical drinks are fun. Drinking out of a silly mug is a lot of fun. We were psyched to add vintage pinball games and a couple of vintage video games, including a classic tabletop Ms. Pac-Man.”
“It’s a great way to spend some time with the kids, play some games while you’re waiting for your pizza to come out.”
“The most important thing to us is that we’re a family friendly restaurant. You feel comfortable bringing your kids, you bring your grandmother. There’s something for everybody on the menu and it’s a fun place to be. We have good music playing.”
