Rock City Pizza
Some have called Joseph Charles an innovator.
"I'm taking it back to the old school but I'm adding new flavor. "
Some think he's a stickler for service.
"Put it side by side. Like that. Yes. Oh my lord Cody!"
Others have called him a perfectionist.
"How did you like that chicken parm pizza you got last night?"
And a true professional.
"That’s how the real professionals do it. You can't teach this stuff at school. You got to learn it through the hard knocks. In the hot kitchen. It's a vibe. This is the Rock City Vibe."
And he's making sure EVERY meal rocks, at Rock City Pizza.
Located in Brighton, Massachusetts, Rock City Pizza is not your average ordinary neighborhood pizza shop.
"Rock City Pizza is not your average pizza shop. Obviously I'm not your average guy, I started Rock City Pizza because I love music. I love food. It doesn't look like I'm a skinny guy. But I find that the skinny guys can eat the most it's my way of fusing music with food. I love to listen to music while I work. Music is like singing to your soul. Music keeps me energized. Music keeps me fueled."
And while the music keeps Joseph fueled, he and is staff keep their customers filled with ultra fresh food made right in front of them from their open kitchen.
"We have an open kitchen. We welcome you with open arms. Usually a customer can't come in and do this at every sub shop. See you dice up their pepperoni. If you're a dice up pepperoni type of guy. Slice up my sausages. Give me my bacon how I want it. You usually can't get that anywhere else over here you can. It can be annoying. But if that's what you want to do we can accommodate that. It's very unique. "
The appetizers options at Rock City read like a greatest hits of comfort food favorites.
You could get traditional Buffalo chicken wings. Or have all of that Buffalo flavor stuffed into an egg roll.
"I think everyone loves buffalo chicken. So we took our hand breaded buffalo chicken and put it in some egg rolls. Comes to the blue cheese dip. You're gonna need a couple of napkins, you're gonna make a mess, but it's a good mess. ".
Those beautiful messes continue throughout the menu. There's Bacon Cheesy fries dripping in mozzarella and cheddar and the Get in My Belly Onions Rings smothered with cheddar cheese sauce and bacon bits.
"You get the crispy the crunchiness but you also get that cheesy goodness.
It tastes like heaven in your mouth. Just make sure you're home. Because you're gonna not want to do anything else besides eat and sleep."
All of the sandwiches at Rock City Pizza are named after bands and rock n roll legends.
The Jimi Hendrix will have you in a food haze, stacked with Cajun chicken, banana peppers, grilled red onions and pepper jack cheese. You won't 'want to miss' the Aerosmith, an 'amazing' sandwich loaded up with Chicken, Chipotle Mayo, Swiss, Lettuce and Tomato. And If you want some spice with your steak, you'll want to 'run like hell' for the Pink Floyd.
"Pink Floyd is that steak bomb and we added that pepperoni and pepper jack to keep the people spicy and hot off their feet. We have the shaved steak. Pepperoni, grilled peppers and onions But we're doing the pepperjack cheese because everyone loves that pepperjack cheese."
And if you like burgers, the Biggie Burger at Rock City is a hit.
"That's the big one, man. The biggie burger is a double patty. Triple cheese, banana peppers, truffle mayo, truffle salt, brioche bun. That's the burger of all burgers. It's really like this. It's a huge burger."
Much like the burger, when it comes to size, the calzone is a huge hit as well.
"That's a big calzone. Look at that! You're not going to get that anywhere else. That's 20 inches of goodness."
And while the staff will stuff the calzone with anything you want, the Steak Bomb is a fan favorite.
"The steak bomb calzone is shaved steak, mushrooms, peppers, onions grilled and American cheese on top. Gotta try it gotta try. It's a must have."
The pizza is the true star of the Rock City show. With options like this crispy pie topped with chicken parm and The eponymous Rock City Pizza, loaded up with Pepperoni, Mushrooms, Red Onion, Olives and Tomato.
"It's your everything pizza. It has some veggie, it has some meat. It's what we like, we like a hearty meal."
And for a mashup of sweet and savory, there's the Blanco Hawaiian topped with Pineapple, Brown Sugar and Bacon.
"It's not your traditional Hawaiian pizza. So I decided to take remove the pizza sauce. Just put the mozzarella cheese, brown sugar because..I love everything that's sweet. Keep the bacon and keep the pineapple. It's like the double whammy you get to eat you get your carbs you get your protein and you get your sweet. I don't think you need dessert after this."
If you DID want to go straight to dessert, Joseph probably wouldn't blame you.
"I love everything that's sweet."
And he'd tell you to get yourself some Sweet Tooth Potato Fries smothered with caramel. Or grab an order of their fried dough bites.
"We add cinnamon, caramel sugar, we butter them u p a little bit. They're soft. And that is the number one dessert here number one seller."
And if those don't give you your fill of sweet, Joseph's hospitality at Rock City sure will.
"I am having fun. I come here, probably more than my wife wants me to be here. It makes me a kid again. It really does."
