With locations in Nashua and this one at Tuscan Village in Salem, New Hampshire, OakCraft Pizza is a fast casual spot pumping out personal pizzas. Owner Rick Carvallo wanted to provide an inexpensive way for everyone to get pizza their way.
“We’re going to help you choose your sauce, cheese and toppings. Once we kind of walked down the line together, you put together your pizza of your choosing, we’re gonna throw it in the oven…And by the time you’re kind of done paying a pizza is almost ready to enjoy.”
It’s all done in a comfortable spot with a beautiful woodfired oven, and a lineup of super-fresh ingredients.
“It’s an Italian imported oven with a rotating deck. The importance of having a rotating deck is to make sure that your pizza comes out more consistently every time. We really take pride in the dough being fresh, the ingredients being fresh, and everything coming together to make a really nice pizza. The old saying is you get out what you put in. And so if you put in the best, you’re always gonna get out the best and we believe that having the freshest ingredients in the best crust is always going to give us the upper hand in that sense.”
Before you get to customizing your pizza, an appetizer is in order. Like Oak Craft’s addictive Cheesy Garlic Bread served with tangy marinara.
“When you take a bite of the cheesy bread, you’re gonna get some of that dough that’s nice and soft and almost like pillowy that nice flavor of the garlic, some of the oil off of that cheese and mixing it with our red sauce. It’s a really nice little snack. It’s just delicious”
There’s fresh salad served with creamy buttermilk ranch…and tasty toasts like this one with ricotta and a hot honey drizzle.
“We take a nice slice of bread. We toast it in our oven, and then we throw a nice thin layer of ricotta, and then a nice hot honey. Drizzle on top. A little bit sweet but you get the creaminess from the ricotta. And it’s a delicious snack.”
And the meatballs here will rival your Nona’s.
“So the meatballs are tender. They’re light. I’ve even had customers say..I eat them and they’re so delicious. I’m actually more hungry after I eat them because I just want more of that flavor.”
When you’re ready for pizza, you have almost endless options.
“You can walk right in choose your sauce, your cheese, your toppings, and you get to kind of see it being made right in front of you. And then obviously, when it comes out, it’s a it’s your masterpiece that you created. They’re all delicious, because they’re all made on our house made crust. And they’re what you want. “
Oak Craft also offers a variety of composed pizzas like the ‘On the Ranch’ loaded up with chicken, bacon, sliced tomatoes, shredded lettuce, and a buttermilk ranch drizzle
And the unique Sunnyside- a breakfast inspired pizza that’s good all day.
“Although we’re not open for breakfast, it’s definitely something that people enjoy all throughout the day. We crack two eggs right on there and throw a little bacon, a little shredded mozzarella, we actually use an olive oil base you get a little bit of the saltiness a little bit the egg gets a little bit runny, and it’s a really enjoyable light pizza. And it’s one of our favorites.”
There are classics like the Old World Margherita and amped up versions of your favorites- like this pepperoni pizza with a hot honey drizzle.
“It’s just a pepperoni pizza spiced up a little bit with a little bit of the sweetness from the hot honey. We throw a little grated parmesan after it’s really light and easy to eat but at the same time. It has a little bit of a kick. And most of all, it has that nice sweetness to it.”
But if you ask Rick, he’ll tell you the Vodka pie is the best.
“The vodka pie is my favorite. It’s kind of an ode to penne alla vodka dish. So you have vodka sauce, we use fresh mozz, and then we use prosciutto, peas, mushrooms, we top it off a little fresh parm, and basil. You get the saltiness from the prosciutto to the sauce is just delicious. It’s really really good.”
At dessert, there’s only one option – and that’s no problem, because everybody seems to like it.
“So who doesn’t love a good whoopie pie? Right? So we can serve in plain or we roll them an Oreo or sprinkle. It’s a really cool dessert. You know? Everybody pretends they’re buying it for their kid, but we all know.”
