What makes a good bagel?
A good bagel?
You want to have a nice crispy crust.
Texture is important.
Chewy and soft but not too soft.
Size is important. It needs to be not too little not too big. Goldilox.
It should bounce back.
Flavor is super important. We like to use good ingredients
some bagel nerds would say that these listers are highly desirable.
We like to coat the full bagel. I think that’s important. When you get everything bagel that has like two poppy seeds on it its a nothing bagel. Makes me sad.

Goldilox is a gourmet bagel shop in Medford. We make our own bagels. We make our spreads. Our bagels are I wouldn’t say they’re New York or Montreal specifically. I would say they’re sort of a hybrid between the two.
It’s a larger bagel. It’s got a good structure to it. It’s got a nice chew. I think it has a little bit of sweetness to it. It’s what you think of when you think of a bagel
I would say their Medford style bagels.
The key to a good bagel in my opinion is consistency with the recipe.
You got to get a proper dough you have to have a proper starter.
It is sourdough starter, kosher salt, yeast, malt and dark brown sugar.
You have to form the bagel.
We have to divide it up so that we can feed it into our divider former machine and then outcomes bagels.
They have to proof. hey have to boil.
This is just some plain bagel dough, but we’re gonna turn these into everything bagels. First, we’re gonna boil them and it’s 25 gallon kettle here. I’ll give him a few dunks, shake all the excess water off. Our everything bagels are unique because we dip them on both sides. People want an everything bagel. I’m gonna give him an everything bagel.
These are gonna go into the oven. We use a 600 degree oven. It’s an old style rotary deck oven. It’s like a carousel inside of an oven. So it’s just using the rotation to cook the bagels even. To me a good everything bagel should taste a little nutty. You’re gonna see a ton of seeds. You’re gonna see some onion flake. You’re gonna see some garlic. You’re gonna see a lot of poppy. It’s gonna be almost crunchy even. It should smack you in the face.
So everyday we have plain, sesame, everything, poppy, onion, rosemary salt, and salt. The bagels are hearty. It’s a better vehicle for a breakfast sandwich
The just right is our traditional breakfast sandwich.
Just the classic meat egg and cheese. You get some over medium eggs which are always cooked perfectly. You get a nice amount of cheese good piece of meat if you want it. Add some delicious avocado, tomato.
It’s just a very solid breakfast sandwich a good start to your day.
Graceland is sort of the name is an homage to Elvis. It’s peanut butter, banana and Nutella and bacon.
I like to use the term dirty Is this a good dirty sandwich. You got the peanut butter on there. You got Nutella. You got the banana, but then you put the bacon in there and it kind of throws a wrench in there. But you’re like, Oh, this is pretty good. It’s greasy. It’s fatty. It’s got something interesting going on.
We call it a dessert bagel. So it’s just like lovely sweets on a bagel. Its delicious.
‘Are you ready lox?’ is a silly name that I gave the traditional sort of lox breakfast sandwich. It’s lox cream cheese, onion, capers, and tomato.
We use the Acme smoked salmon from Brooklyn. Just a very high quality salmon. It’s very New York. It’s just a good nod to a New York deli lox sandwich.
When people walk into Goldilox, first of all, I want them to feel welcome. You want this to be like a welcoming neighborhood place. This is our neighborhood. We live four blocks up the street
We wanted to make it very inviting. We wanted to sort of have a place where people could meet with each other hang out for a little bit.
We want to be friendly with all of our neighbors, basically. We want to bring our neighbors together.
You’re gonna get a unique bangle here. You’re not gonna get a generic bagel. If you come to Goldilox. You’re gonna get a real quality bagel made with love made with the highest quality of ingredients. It’s just a good, fresh, delicious bagel.
