The Gingerbread Construction Company started back in 1980. At that time, we’re just making a few gingerbread houses, and eventually, we decided people liked the idea so much that we would cut gingerbread cookies to go along with the gingerbread houses. And the gingerbread cookies took over.
When you think of gingerbread, you think of the Victorian days, and when you get to this Wakefield location, we kind of mimicked that feeling by creating the building to look more like a Victorian home. People hear the word Gingerbread Construction Company and they know that we sell gingerbread houses, but when they come into the store, they realize that we are famous for a lot more than that.
We are definitely known for our gingerbread houses, especially at Christmastime. However, the rest of the year, we’re definitely known for our muffins. We have 19 varieties of gourmet muffins that people love.
They’re awesome, they’re big, they’re huge, they’re decadent.
Our muffins taste so good because we use the best ingredients, we use fresh ingredients, and we put a lot of love and care into making them fresh every day.

The secret to making our muffins look like this has to do with our secret recipe, so I can’t give that away, but we do use convection ovens, which does help with the top being a little bit taller than most people’s muffins.
When the bakers come in in the morning and they start to make just our basic breakfast muffins, they’ll put the dry mix into the bowl, they’ll add the water, the eggs, the vanilla. They mix it all in the mixer. When that’s all done, they separate it into bowls by different variety, then they add to each bowl the different things they need for each variety. They mix them together, and then we have someone that will scoop them up individually, they get topped if it’s a muffin that gets topped, they go into the oven, and they bake out, and they’re beautiful.
This is our chocolate dream muffin. It’s made from chocolate cake and has a chocolate buttercream filling inside with Lindt chocolate shavings. It’s quite delicious. When we make this muffin, we have to first bake the cake, and then after they are cooled, the baker has to cut the tops, and then they use a pastry bag and actually fill the muffin and then put the top back on. And before we put them out in our muffin case, we sprinkle it with powdered sugar.
This is our strawberry shortcake. It’s a yellow cake, so very moist, with fresh cut strawberries and whipped topping. It tastes just like strawberry shortcake. It’s like eating heaven. It’s delicious.
The gingerbread muffins, we cut the tops off and then we use a pastry bag full of cream cheese icing and we put … Basically, we tell people it’s a swirl, but it looks more like a bullseye inside the muffin. Put the top back on, sprinkle a little powdered sugar. It’s not too spicy, it’s not too sweet. The little bit of cream cheese icing is just enough. That’s our most popular muffin.

I think people love muffins, especially our muffins, because who doesn’t like something a little sweet? A little sugary? It just brightens your day when you’re not having the best day. Usually, go for that little bit of sugar, and it makes everything better.
