Beer lovers who are looking to enjoy a brew with some serious eats be warned.
You’re going to want to get to Epigram.
Set in this massive space in Tyngsboro, Epigram Brewery is the type of place you’d want in your own town with hometown owners always on site, a passionate chef making sure each dish that comes out of the kitchen is perfect and a team of brewers ensuring every pint that's poured is one to be proud of.
”We are a full brewery with a full service kitchen. We only sell the beers we make in house. We have 19 beers on tap. We've got about 15,000 square feet an outdoor patio, a lounge, a mezzanine. Chef Adam also has a full menu. So we've got something for everybody.”
Dan Lyons and long time friend Jeff White believe not only in the dishes they serve- but also the beers that go along with it. And while they make sure everyone's pint is full, Executive Chef Adam LaPierre is back in the kitchen with a menu of dishes beyond what you’d find at your run of the mill brewery.
“A lot of breweries really focus on beer, which we do that as well, but we want a focus on food as well.”
Nothing goes better with suds- than a slice- and the Epigram team decided when it came to pizza, they were going to bring a South Shore staple north to Tyngsboro.
“It's not easy to get this kind of pizza in this area. It is a 10 inch pizza. It's pan pizza, but the difference..is the lacing and the caramelization on the edges of the pizza. It's the only type of pizza dough that has butter in it. Gives it a nice cracker crust but the sauce and the cheese to the edge is the main thing, right? So when that pan heats up, that sauce and cheese caramelizes right to the edge, it comes out and it gives you that beautiful lacing, which is something that people really look for.”
There’s the bacon and sweet pepper pizza; a flavorful combo on peppadew peppers and salty bacon and the wildly popular pickle pizza.
“It's just a great combination. We use pickle chips on it, and the mix of the pickle combined with the cheese is already good enough, but the spicy aioli is really what sets it apart. We have a lot of people come in, and at first they're a little hesitant to order a pickle pizza, but once you try it, you come back for it.”
But nothing quite tops the pepperoni- a classic pie amped up with the help of some Mike’s Hot Honey.
“The pepperonis tend to catch some of that hot honey. And when you bite into that it's sweet and spicy and kind of just hits all the boxes.”
“Hot honey is very popular right now at any pizza shop, we specifically chose cupping pepperonis, and they act like a little vessel for the hot honey to go into. So it's nice to be able to pick up a slice of pizza and get that cupping pepperoni full of hot honey. You can't miss it."
But before you get your slice on, there are many ways to go as far as apps are concerned like addictive wings tossed in the sauce of your choice. But take it from the owner, the chicken tenders are a must.
“We literally do have the best chicken fingers I've ever had. And Lord knows, I've had my fair share of chicken fingers.”
“We 48 hour brine them. Marinate them in a buttermilk and then they're freshly breaded to order. They come out piping hot, and they're among the best chicken fingers ever. I know it sounds silly for a chicken finger, but they really are that good.”
And what's a cold beer without a soft, chewy pretzel? These bite sized pieces are perfect dipped in Epigram’s beer cheese- made with one of their own brews.
“What really sets the pretzel bites apart from everywhere else is we use our own craft beer cheese. We pour the beer into the cheese, double boil it out, and it just it gives it an unreal flavor. The beer cheese is the big hit.”
There are fried pickles- coated in panko for added crunch and served with a spicy aioli- and even some fried guacamole.
“It's a nice crunchy outside. When you bite into it, you get like that crunch, but the inside is so warm and soft. We usually serve it with ranch dressing or spicy aioli. You have to try it.”
And when you don’t have your hand on a cold pint, you should absolutely have one on a hot sandwich like their overloaded Cubano.
“We get actual Cuban bread. And the beauty of it is the pulled pork mixed with the ham, it's gives it a totally different flavor profile. And the spicy brown mustard. You throw it in the panini press. Keeps the bread fluffy, but it gives that nice grill mark on it that melts the cheese. It is so delicious.”
But nothing is better with a beer than a burger- especially if it's a smashburger.
“Ours are great. Angus beef. We get them in balls. We put them on the flat top. Smash them a little bit of onion. They cook pretty quick cheese, less tomato on your pickle on a buttered and griddled bun. They're outstanding. People love the smashburgers.”
And for a sweet treat at the end of your delicious beer infused experience, the Fried Oreos are always a good choice.
“We use our one of our own beers to do a beer batter on an Oreo, and we serve it with a raspberry jam as well as a Nutella spread. When we fry them, it's like a almost turns into, like a puff pastry, so it gets kind of big, and that's all nice and soft and the cream inside. It's just amazing.”
And with the care and effort that goes into each and every dish, it’s hard to leave hungry from Epigram Brewery.
