Brand new to Patriot Place in Foxboro, Citizen Crust offers a menu of globally inspired street food, in an artistically expressive space.
Greg Galano - Executive Chef, Citizen Crust: “We designed this place to be fun, a little bit more hip. The music's a little louder, the food's a little more exotic but still approachable food that's just fun and exciting.”
That’s Executive Chef Greg Galano, who along with General Manager Tom Perruna, take your tastebuds globetrotting.
Tom Perruna – GM, Citizen Crust: “We have food from all around the world. Chef Greg has come up with great dishes. We have Mexican style food, Asian style food, some Vietnamese style food, American style food. And Italian, of course, Roman style pizza.”
That Roman style sheet pan pizza is the star of the show at Citizen Crust. Chef Greg is actually certified in how to make it, and bakes it in an oven imported from Italy, with creations that are a whole lot different than your standard slices. And it all starts with the dough.
Greg Galano - Executive Chef, Citizen Crust: “The difference of this kind of pizza is the fermentation time, which is a really long fermentation. So, it's anywhere from 48 to 72 hours. It's a very special type of flour. It absorbs water at a far superior rate. So this is a whole different ballgame. There is a science to it, there's a magic to it, you have to hit all these sweet spots to create this beautiful, airy, digestible, crispy pizza.”
The pizzas at Citizen Crust range from classic to creative. There are more than a dozen specialty pies to try, but the most popular, is the sweet and spicy Citizen Pie.
Greg Galano - Executive Chef, Citizen Crust: “Citizen Pie is hot honey. Cup and Char Pepperoni, which are pepperoni that char around the outside and get little oil cups in the middle. And then ricotta and mozzarella cheese, and the combination together, it's unreal.”
Tom Perruna – GM, Citizen Crust: “It’s spicy and sweet, so your first bite, you get that sweetness from the honey. But as you’re chewing it and swallow it, you get that little bit of heat in the back. Really delicious pizza.”
So the Citizen Pie is the customers’ favorite, but Chef Greg’s prefers a different combination, appropriately named Greg’s Favourite.
Greg Galano - Executive Chef, Citizen Crust: “That's going to be potato, rosemary ham, fresh rosemary, arugula, extra virgin olive oil and some parmesan cream sauce. And that's something I had in Italy that I fell in love with, and that was always my favorite, inspired me to make this type of pizza, because it was so good.”
Another pizza with Italian inspiration is the Carbonara, topped with pancetta, mozzarella, and lots of Romano cheese. But for something unabashedly American, check out the Citizen Mac Daddy.
Tom Perruna – GM, Citizen Crust: “That‘s our version of a hamburger pizza loaded with seasoned ground beef, cheese, tomatoes and lettuce.”
Greg Galano - Executive Chef, Citizen Crust: “It kind of fits our vibe up at Patriot Place. It's football food. And we kind of got away from the traditional Italian stuff and brought some American influence into the Roman pizza. So that's where that one came along.”
There are two ways to experience the pizza at Citizen Crust. If you’re in a rush, just stop by their slice bar, where the options are laid out in all their colorful, craveable glory.
Greg Galano - Executive Chef, Citizen Crust: “It's just a beautiful array of pies as far as the eye can see. And you're gonna be able to get a slice of this, a slice of that, try one today, try one tomorrow kind of deal.”
If you prefer to eat in the dining room, the pizzas are served as massive sheets. And they come out of the kitchen uncut, with a side of scissors.
Greg Galano - Executive Chef, Citizen Crust: “It's kind of part of the fun. You get to cut your own pizza. However big you want. Your kid wants a little slice. Sure. Someone's really hungry, cut half the pizza if you want. That's kind of how we designed it. That's how they do it in Italy, so we brought that experience back to the United States.”
In fact, they brought the whole world back to the United States to fill the rest of the menu here.
Appetizers include pan fried Shanghai Pork Dumplings, hand rolled Taquitos stuffed with braised chicken and topped with sour cream and guac, crispy battered whole milk mozzarella cheese curds with ghost pepper sea salt, and an enormous platter of absolutely addictive Carne Asada Fries.
Greg Galano - Executive Chef, Citizen Crust: “Carne Asada Fries are really popular out on the West Coast. Grilled Carne Asada steak topped over Sidewinder fries, all kinds of cotija cheese, cheddar, habanero cheddar, just all kinds of delicious stuff, and everybody's just going to share this big beautiful sheet tray of fries.”
The global feast continues with entrees like Chicken Schnitzel atop spaetzle egg noodles, a Spicy Poke Bowl of sashimi tuna topped with crispy onions, and the Huy Fong Nashville Chicken sandwich.
Greg Galano - Executive Chef, Citizen Crust: “We kind of blended culinary worlds with this. Huy Fong is an ode to the founder of Sriracha. And we dehydrate Sriracha into a powder, and then we use that for the blend for the Nashville Chicken. So that's where our spice comes from. It's just out of this world.”
There are some sweet ways to end your experience at Citizen Crust. For something quick, check out the gelato case, filled with more than a dozen flavors, or get that same creamy gelato as part of a decadent Donut Sundae. But for a serious sugar rush, and some social media buzz, order the enormous cloud of Cotton Candy.
Greg Galano - Executive Chef, Citizen Crust: “Cotton Candy has taken off like we've never imagined it would. We make it in a cool way and we call it Cloud Candy. And we serve on these long sticks in wood blocks. So when it comes to the table, it seems like a little cloud is over the whole table.”
Tom Perruna – GM, Citizen Crust: “It's just a massive twirl of cotton candy. You can grab it, great for sharing. Great for Instagram. First they take pictures and then they eat it.”
In fact, just about everything you see at Citizen Crust is Insta-worthy; from the striking exterior, to the expansive indoor and outdoor sixty seat bar, to the beautiful murals covering the walls.
Greg Galano - Executive Chef, Citizen Crust: “We brought in a really well known artist to do street art on the walls. And we really just want to give that vibe of you feel like you're somewhere else. That's what we want to do. We think we’ve done a fantastic job at it, and hope you think so too.”
