“People love pickles, people love chicken. So we figured, if we can put both things together and make it a unique sandwich, why not?”
There are so many things you’re going to want to sink your teeth into at Chomp.
With locations on the east side of Providence, and this shoreside spot in Warren, Rhode Island, Chomp Kitchen and Drinks is the creation of owner Sam Glynn, a driven restaurateur who wanted to elevate all of your comfort food faves and serve it in this big beautiful spot right on the Warren River.
“The bright airiness is something that we were very cognizant of when we designed it. We wanted to get as close to being outside all the time as we could while still being inside. So a lot of windows, 13-14, foot ceilings. Probably the best view in Warren. It's a really special spot.”
Here, they specialize in smash patties. Cooking each and every mouthwatering masterpiece to perfection on a flat top. And nothing goes better with burgers than some beers.
“Our bar program is second to none. We get a lot of rare and exclusive craft beer that our bartenders love to nerd out about. We're always trying out new things and really trying to just create a spot where people can come multiple times a week, get something different, see familiar faces. What I personally want in a restaurant, but also what I think guests are really looking for in this area of Rhode Island.”
When you come to Chomp, you’re going to want to bring some friends- because with an appetizer menu like this, you’re going to want to order a bunch of dishes to share. There are fragrant Truffle Waffle Fries tossed in a black garlic truffle seasoning and topped with grated parmesan, herbs and white truffle aioli. Or the Garlic Butter Calamari topped with garlic cherry pepper aioli and lemon. But every table must try the Carbonara Mac and Cheese Balls- a comfort food- with an Italian twist.
“We kind of have a joke here that you can take any Italian dish, put it into a mac and cheese ball and make it something that's really special. So we make mac and cheese base and then we ball it into..a baseball sized ball. We then roll them in breadcrumbs and then to order, we deep fry them.
You get salty. You get crunch. You get umami flavors from the prosciutto. You think deep fried mac and cheese. You think gluttony, but our chefs do an incredible job thinking of depth of flavor and presentation on something like this.”
And if wings are your thing, Chomp has you covered. Bone in or boneless, they offer a variety of sauces like Alabama White, Crispy Korean, and their version of Buffalo.
“It's a brown butter buffalo sauce. So it's a little bit more rich and unique than any other buffalo sauce. They are highly addicting, and one that has become really popular. Our Krispy Korean sauce is a kicked up version of a traditional teriyaki sauce. Alabama white sauce is a white barbecue sauce. It adds a zing. There's some spice, but there's a lot of richness from the mayo base of the barbecue sauce. Those are our top three. Those are the ones that people, if they can split it up three ways, that's how they're going to do it.”
Chomp is known for their flavor packed smash burgers- and with a variety like this, it’s no wonder. There’s the Brisket Hash Burger- topped with house made brisket hash, cheddar cheese, crispy fried onions and a tasty Korean bbq sauce.
Or the Smokey Bandit Patty Melt- a rollercoaster of taste and texture with crispy onions, smoke aioli, pickled jalapeños and bbq sauce.
“The crispy onions, the spiciness of the jalapeños, the richness of the smoky aioli that we put on there, the zinginess of the barbecue sauce, they really all compliment each other and it makes for a really fantastic burger.”
The Truffle Burger is a juxtaposition of fancy and fun- topped with a mushroom duxelle and potato chips with gruyere cheese and a white truffle aioli.
“Truffle burger is another flavor bomb. The softest of the bun, the richest of the white truffle aioli, the crunch of the potato chips, the great sear on the burger. It's just a phenomenal comforting bite.”
Of course, if you want something more traditional, Chomp has you covered with their Smash Classic; a simple burger topped with American cheese, pickles, white onion and Chomp sauce.
“Smash classic is our homage to that classic roadside burger. It's simple. It's packed full flavor. Again, it's not a super messy burger. It's one of my favorites, and has become one of our guest favorites too.”
Beyond burgers, Chomp offers a bevy of sandwiches like the so-called “Kind of a Big Dill”; an homage to pickle lovers featuring garlic dill seasoned fried chicken with pickles, tomatoes, lettuce and Ranch served alongside crispy brussel sprouts. And the gut-bombing Ribeye Melt smothered with provolone and rosemary melted onions with a garlic peppercorn sauce on sourdough.
“The garlic peppercorn sauce, with the richness of the steak and the crunchiness of the sourdough, it just makes like a phenomenal bite.”
But if you really want to indulge, try the BBQ Hot Honey Fried Chicken sando that’s both messy and marvelous.
“When we get the order in, we dunk it in the hot honey sauce. We toast that bun, then we add the jalapeño cream cheese, and then we put it back on the flat top for a few minutes to let it render a little bit and then the Alabama barbecue sauce on top of that as well. It is all things. It's hot, it's sweet, it adds some crunch to it. It has a ton of richness from the jalapeño cream cheese. It is super messy, but it's worth every bite.”
