Karv Greek Kouzina
I live by the motto, ‘You gotta eat Greek at least once a week’. Greek food is quite simply, some of the greatest cuisine in the world. It is fresh, it is fragrant, it is flavorful. And this is one of the busiest and most beautiful fast food style Greek restaurants I have ever found.
We are in Windham, New Hampshire, at a restaurant named Karv Greek Kouzina. And as a guy who is obsessed with Greek food, and especially authentic Greek gyros, this place has definitely carved its own niche in the restaurant business. Karv opened up in the spring of 2025 and from the moment you pull up, you realize this is not your typical fast food restaurant. Inside is big and spacious and super clean. It's owned and operated by Alex Lambroulis and his partner, Oscar. And these guys are passionate about real Greek food and flavors. “Karv is a Greek kouzina. We specialize in traditional Greek foods, but what we like to show off is our gyros and our gyro meat, so people can see it. It's an open style kitchen. We don't hide anything. You can come in for lunch. You can come in for dinner and know that you're going to get your food fast. It's going to be fresh, it's all good, clean food.”
The number one reason you got to carve your way into Karv is to get one of these, one of the biggest and best gyros anywhere outside of Greece. Alex has made millions of gyros over the years, so I'm gonna let him show you how it's done. “We're gonna make a Titan Gyro today. Start off with a layer of homemade tzatziki, with imported Greek yogurt, some pork, some lamb and beef in there too, a nice portion of chicken, and then on top we put Karv sauce, which is our spicy mayo. It's a signature sauce, so we're gonna hit it with some tomatoes, onions, and then big handful of fries, some paprika. And there you have it, the Titan Gyro.” You have pork, you have beef, you have lamb, and you have chicken, all stuffed inside that pita bread. It's literally almost too big for my mouth. Luckily, I got a huge mouth. For a sandwich that has so much going on, it's incredible. You can taste all the different layers. This thing is a Greek symphony of awesomeness.
If you know anything about Greek food, you know that they love their dips and spreads, I recommend getting what they call the dip flight, four of their favorite spreads all on one platter. You have their homemade hummus with some nice chickpeas right on top, a nice and smoky roasted eggplant spread, the tzatziki here is some of the finest I have ever tried. It is thick. It is creamy, some nice olive oil, cucumber, garlic, I will put this tzatziki on anything and everything. And my favorite is the spicy feta dip. It's creamy, it's spicy, it's nice and thick, so it can really stand up to a pita chip, that is so insanely good.
French fries are a favorite here at Karv. Obviously, they put their fries inside their gyros, but you can also get a gyro on your french fries. These are the fully loaded gyro fries. You have a base of golden hand cut french fries, and that's topped with tomatoes, onions, roasted corn, avocado, tzatziki, scallions and some of their signature spicy sauce. I'll eat the Gyro Fries all day, every day.
You know how you can tell if a Greek restaurant is authentic? You order a salad and you want it to look like this. This is what's known as the horiatiki salad, or a village salad. It's just a combination of fresh tomatoes, cucumbers, Kalamata olives, capers, red onions, green peppers, and the key is a big old block of imported feta cheese. I've never wanted to be a Greek villager in my life, but if they're eating this every day, I might have to move there.
For dessert. They have a full selection of baklava and Greek cookies and pastries. But for me, Greek dessert is all about the loukoumades. Loukoumades are essentially Greek style donut holes. These are the original, the OG Louks - fried dough balls drizzled in honey syrup topped with some cinnamon and some crushed walnuts. But for me, it is all about the s'mores style loukoumades drizzled with chocolate sauce topped with marshmallow fluff and some graham cracker crumbles. They're very sticky and very chocolatey, so they serve them with these little wooden spoons. It's so ridiculously good I don't even know what to say. My heart is full of joy and my mouth is full of marshmallow, chocolate and fried dough, amazing.
“I think you should come to Karv because you can come in for lunch and get yourself a nice rice bowl or a gyro, and then come back for dinner and have a pastichio or moussaka. So we have a little bit of everything.” In a world full of boring fast food restaurants, this is where you go for flavor and freshness, and most importantly, the best darn gyro around.
