Meatlovers, make note.
“We are everything you need for your grill.”
If you’re looking for the best when it comes to butchery, you should find your way to Tuckaway.
For well over a decade, The Tuckaway Tavern & Butchery in Raymond, New Hampshire has been a one stop shop for all things meat, whether you’re dining in or grabbing something for the grill. Chef Bobby Marcotte has been here since day one, making sure everything is the best when it comes to quality.
“So tons of options out there. We know that and we don't take that lightly here at the Tuckaway. We start with quality ingredients and try to make them unique. But we're also letting that high quality meat speak for itself. We really went for a rustic tavern vibe, a little bit modern, a little bit rustic, almost like you're walking into a barn. Our steakhouse is attached to the butcher shop. While you're waiting for a seat, you can shop through the butcher shop or after dinner breeze through the butcher shop and grab some stuff to take home as well. You'll see hand cut steaks, fresh ground beef, bison, burgers, marinated wings. You name it, we do it. We have become pretty famous for our steak tips And of course our handcrafted sausages as well. You come in, you're walking through our shop and then you get into the tavern and you're greeted as family. We are made to be a comfort zone. So we are a modern American comfort food focused highly on meats. And just that good old fashioned home cooking.”
There are so many tasty ways to kick off your meal like the “Dirty Birds”- Tuckaway’s take on wings tossed in Alabama dipping sauce or the iconic Rooster Balls.
“Rooster Balls been with us at Tuckaway since day one. We came up with these little croquettes stuffed with buffalo chicken cream cheese veggies, deep fried and then we topped them with that hot sauce and ranch..Really something unique and if I ever tried to take these things off the menu, there'd be riots.”
For a pile up of tasty, get yourself an order of Tuckaway’s Chopped Cheese Fries.
“Everything that you would want on a chop cheese sub, we're throwing it on top of fries, including that Milly Island sauce, little truffle ranch and of course, all your toppings lettuce, pickles, tomatoes, onions. Who needs bread right? You're literally eating your cheeseburger and your fries all in one bite. It's perfect.”
Tuckaway also serves burgers the more traditional way. These 10 ounce patties are grilled the way you want them and then, the kitchen gets creative with options like the so-called “Whole Tucking Farm”.
“This is 10 ounces of fresh ground beef. That on its own is tough to eat. We topped that with some buttermilk fried chicken, some smoked bacon, and melted cheddar, and then we finished it with our tuck sauce. It's literally the whole farm. You got your cow, you got your chicken and the pig. It's a monster.”
For a true knockout of a burger, get the Mike Byson.
“I love the name of this because we decided to hit it with one two punch of white Bama barbecue sauce and our honey barbecue sauce. It's fresh ground bison that we rub with honey barbecue topped it with some bacon and cheddar and then finish it with crispy onion strings. It's like instant salivation I guess would be would be the best word.”
And then there’s this handheld version of Surf and Turf.
“We fresh grind ribeye and tenderloin. Then we top that with our famous lobster salad. All lobster claw knuckle meat, and then we finish that with a truffle mayo. We wanted to create that luxurious burger that no one else has.”
Of course, if you’re a lobster roll purist, they have those too- served in two different styles
“You can do it Maine style tossed and mayo served cold. Or we do.. the Connecticut style where we simmer it in butter and serve it warm with butter. On Monday Tuesday we do buy one get one free you don't have to choose. You can get a Maine and Connecticut. There's no right or wrong right way here. Why hold yourself back?”
Since we are at a butchery, fresh cut steaks and chops are a must-especially if you’re a steak tip connoisseur.
“Our steak tips are special. We vacuum tumble them. We use our special spices that are custom made for us. We haven't touched the recipe we start with great be first and foremost. And they melt in your mouth.”
For something more indulgent, make sure you order your ribeye ‘Black Forest Style’.
“You can get any of our state's top black forest style, which is shrimp and lobster scampi with our house whipped garlic butter, a little bit of white wine and a little bit of fresh squeezed lemon. It's the ultimate surf and turf.”
And if you just want to put yourself in a meat coma, order The Butchers Block.
“Butcher’s Block is a little taste of everything. It's for those customers that just can't decide what meat they want to get. We do our cherry smoked barbecue ribs that we do dry rub and smoking for 12 hours. We give you some of our marinated chicken tenders marinated and then of course, our steak tips. Two sides, a biscuit. It's a serious meal. It could be multiple meals depending on how you look at it.”
And for a sweet that’s sure to leave you satisfied, try The “so-called” Bloo Balls.
“It's tempura fried blueberry cheesecake with a Maine blueberry ice cream, a little blueberry jam underneath and fresh whipped cream. It's like warm, warm with the cheesecake cold with the ice cream, you get this balance of flavor as well as temperature. It's like an ultimate dessert.”
From meats to sweets and everything in between, it’s time you get away, to the Tuckaway Tavern and Butchery.
