Firefly’s Bar-B-Que
Barbecue is the ultimate American cuisine. It is like the Superbowl of food. Ribs, chicken, brisket, pulled pork, mac and cheese, collared greens. I mean, that’s what it’s all about, and it’s not like it was invented last week. This is something that we’ve been doing for decades, for hundreds of years. And to do in a true American food here in New England and do it as well as they do it anywhere else in the country, that’s what Firefly’s is all about. I’m Steve Uliss. Firefly’s barbecue opened up in 2001, and we’ve always served award-winning, authentic barbecue, but we keep growing and growing and doing more and more. First of all, Firefly’s atmosphere, we’re 12,000 square feet. So to fill 12,000 square feet with barbecue, you’ve got to do something fun and exciting all of the time, and that’s what we’ve created. We don’t just have a dining room, we have an outstanding outdoor backyard. We have an amazing new bar. We have live entertainment, fire pits, corn-hole out in the backyard. We do things bigger and better than anyone else.
My ribs are the signature item here. I’ve honed that recipe year after year. You don’t want the fallen off the bone. You want that rib to pull away from the bone, and you want to see that nice blend of the rub, the red smoke ring. When you sink your teeth into that rib, it pulls away from the bone. And I will put my rib up against anyone because it truly is the best rib you’re going to have, period.
We take pride in our wings. We have two different kinds. Our jumbo wings, which have been dry rubbed and smoked, and then they’re finished on the grill with a little bit of honey cayenne sauce over the top, and they’re served with a Memphis ranch. But then a few years ago we came up with my Crazy Roo’s Wings, and those wings are dry rubbed, marinated for 24 hours, and then they’re smoked, and then they’re flash fried so they get nice and crispy and you get this really deep chickeny rub flavor. And then we toss them in a sauce which Sriracha and molasses and lime and cilantro, and they are to die for. So I’m flip flopping on which favorite wing I have. Right now it would be the Crazy Roo’s Wings because I love that dry rub. I love that flavor. I love that sauce. But if I’m in the mood for clump and huge and unctuous, those Firefly’s jumbo wings are the way to go.
You come to Firefly’s, you can get all of the barbecue staples. But then we kick it up a little bit. If you want the ultimate bacon experience, at Firefly’s, Candy Lacquered Bacon is the only bacon you need to sink your teeth into. We cure and smoke our bacon, and then we pan sear it with brown sugar, and it gets this glaze of lacquer, and we serve it with a sunny side egg, smoky and sweet with a teeny little bit of heat, and it is amazing.
Nachos. Everyone has them on the menu. Everyone does them the same old way. No, no, no. Firefly’s kicks it up another notch. We use a Chihuahua cheese, which is a light soft Mexican cheese, and a Monterey Jack and Cheddar. We layer the chips with the cheese. We make a smoked tomato salsa with Pico de Gallo, top it with pulled pork. We try to disperse all of that goodness throughout the entire nacho. So, of course, there’s going to be some chips that are, you know, the naked chip. But then you have the chip that has all of the stuff and you try to get that one big fantastic bite, and the Rachel’s rocking nachos.
We’ve been doing chicken and waffles for a long time. Our fried chicken goes through a process. We brine it, we dry rub it, buttermilk battered, fried, light, crispy, juicy. We make a great buttermilk waffle, which is delicious, topped with pure maple syrup. Chicken and waffles. It’s sweet, it’s savory, it’s juicy, it’s delicious. That’s what it’s all about.
The dessert with the most wow factor, our Carly & Rachel Cookie Sundae. Homemade Toll House cookies, vanilla bean ice cream, hot fudge, whipped cream, simple. But sometimes simple is great, and that’s what it is. A classic dessert served all the time.
I’ve been doing this my whole life. It’s the only thing that I know, and I still to this day have a passion. I want to see all of my customers. I have the greatest employees. We deliver every single day. I want to walk around and I want to greet my guests. Firefly’s is way more than just dining out. Firefly’s is the ultimate Southern dining experience, period! That’s what it is.
