"Our pies are like snowflakes. Every one is different because every one is handmade. There's a lot of love and care that goes in each and every one of those pies."

 

"The perfect pie I believe starts with the dough. It's all about the dough. So many people are afraid to work with dough when it's basically three or four ingredients. You know, your flour, your shortening, your water."

 

"When we're ready to make our dough, we'll pull it out here. We're going to roll it out. We're going to add our ingredients. I think fresh ingredients make a good pie. Our chicken pie is hand-pulled chicken meat. Our apple pies, we hand peel the apples and cut the apples from scratch. We use cultivated blueberries and wild Maine blueberries in our pies. We take the time to get the quality ingredients."

 

"We hand peel our apples. We add the cinnamon and sugar, kind of a light toss to them, with a little lemon juice to bring that brightness out, encrusted in our signature crust, baked in our oven daily so it's fresh, and it tastes like Mom's."

 

"Strawberry rhubarb; it's your sweet and your tangy. The strawberries, they're beautiful and seasoned. They get that nice, sweet flavor and juicy, and then you've got that rhubarb that's kind of got a little bit of toughness to it, but it's got that real tang to it, and it just marries together perfect."

 

"The  classic all berry pie is tart.  So this is blackberries, blueberries, strawberries, cranberries, and raspberries all mixed under one roof, encrusted in our wonderful crust. Then we put a little evaporated milk on the top to give that nice browning effect to it.  We use sugar and we use some tapioca, and of course, a little butter, because everything's better with butter. You know how you get the little jowls on the back of you? That's what you should be tasting when you have our tart all berry pie."

 

"Cape Cod Crunch is something that we created here because we're on Cape Cod, right? So it's chocolate pudding. It's toffee bits. It's fresh whipped cream. Yep, we don't use the canned stuff. More toffee and melted chocolate on top, it is really good if you're a chocolate lover. It's phenomenal."

 

"This key lime pie was created by Kristen. We do the real graham cracker.  We mix the sugar and butter and tap them all down into our pie tins. Then she makes her mix. And again, the real whipped cream, she puts the lime zest inside. It's a really good pie."

 

"You can't do any better than this chicken pie.   We cook our whole birds.  We pull them.  We make our gravy from the stock that you just cooked all the chicken in. So it's a wonderful gravy. It's all meat. It's the white, the dark mixed together. Again, we get the crust on the bottom. We take about a pound of chicken meat, mix it with our gravy, put it in the pie and then top it. It's great. 

 

"You know it's  a homemade product when you bite into this chicken pie.  There's just no doubt about it. It's not coming off a machine. It's coming straight from somebody's hands and heart."

 

"But what drives my customer in here for that pie???  I think it's the knowledge that they know how we prepare our stuff here, and I think that's what really draws them.  And I have to go back to the fact that it's just made with such love here, and it's the memories. It's an old-time favorite and people love it."
