Any good chef has a fully stocked spice rack. And Christina's Spice & Specialty Foods, in Cambridge, offers plenty of products to pack your pantry. The store only occupies a couple-hundred square feet, but every inch is packed with the ingredients you'll need to round out any recipe. And while there are plenty of other spice stores around New England, few cross culinary cultural confines like Christina's.

Raymond Ford - President, Christina's Spice & Specialty Foods: "I think it's unique because it's not ethnically specific in any way. For there to be a store, for instance, where you might be able to go in an buy Lavender from France, next to Black Kokum from India, next to Cuitlacoche from Mexico, I think that's what makes it very very unusual."

Besides the spices, there are about 40 varieties of chiles in powder, flake, and whole dried forms. Other dried delicacies include mushrooms like Morells and Black Trumpets, and a rainbow of fruit almost too pretty to eat. Christina's also sells hot sauces, mustards, oils, and vinegars.

All the standard spices are available, like black peppercorns; but there's also green, pink, white, or mixed. Christina's variety is almost endless, offering every seasoning from Allspice to Zatar.
